Before I start the article, I opened the refrigerator and bought my artichokes, which I bought from the market on Wednesday, but kept in water. I also took out my last frozen peas from last summer (I stocked up a lot in the freezer).

I quickly chopped onions, carrots and potatoes. Afterwards, it was prepared quickly, and at the end, the artichoke stuffed with olive oil, which was cooked in a pressure cooker for exactly 12 minutes, was ready.

I waited for them to cool down while I was writing the cover letter and the recipe, and now I am sharing it with you with the photo I took when it was warm :)

Ingredients for the Pressure Cooker Stuffed Artichoke Recipe

  • 5 artichokes
  • 1 large onion
  • 1 cups fresh peas
  • 1 medium potatoes
  • 1 medium carrot
  • 4 tablespoon of olive oil
  • Juice of half a lemon
  • 1,5 water glass of water
  • 1 sweet spice salt

How to Make Stuffed Artichokes Recipe in a Pressure Cooker?

  1. Chop the onion. Peel the carrot and potato and cut them into cubes slightly larger than the backgammon dice.
  2. Take olive oil and onions in the pressure cooker, add salt and fry until the onions turn slightly pink.
  3. Add the carrots to the onions and fry for 1 minute.
  4. Finally, add the potatoes and peas and fry for 1 more minute.
  5. Put the artichokes on the carrots, peas and potatoes you roasted.
  6. Add 1,5 cups of water to the pot. Squeeze the juice of half a lemon and turn off the pressure cooker.
  7. Cook in the middle of the hob on high heat until steam comes out of the pressure cooker. When the steam starts to come out, turn the pressure cooker to the lowest and cook for 1 minutes by changing the level to 12 (one).
  8. Close the bottom of the pressure cooker, carefully open the cover of the pressure cooker when the steam output is completely finished and serve warm or cold.
