Dried Cod Bean Salad

As much as the olive oil that I consume fresh his salad I first encountered the dried cowpea I made in Manisa years ago in Manisa. They used to call these tiny beans, which are cooked just like dry beans, as karnıkara there :) Especially in winter, mincemeat is always on the table.
When I saw it in the market the other day, I remembered those old days again. I forgot how delicious dried cowpea is. Since my wife, who tasted it for the first time, liked it very much, it will take its place on our table in different ways this winter.

Ingredients for Dry Kidney Bean Salad Recipe
- 1 cup of dried black eyed peas
- 2 stalks of scallion
- 2 roasted red pepper
- 3 tablespoons of chopped parsley
- 3 tablespoons chopped dill
- 1 medium carrot
- salt
- olive oil
- Pomegranate Syrup
- The juice of half a lemon
Fabrication:
- Soak the kidney beans in hot water the night before. In the morning, add a little more water and cook on medium heat until soft.
- Drain the softened kidney beans and leave to cool.
- Take the chopped spring onion, dill, parsley, finely chopped roasted pepper and grated carrot into a deep mixing bowl.
- Add the cooled black-eyed peas on top.
- Finally, add salt, lemon juice, olive oil and pomegranate syrup, mix and serve.
Sometimes I confuse what to put in which dishes during the change of seasons. Today, I couldn't decide whether I should use dry onion or spring onion for the cowpea salad.
