We make a dried tzatziki that appeals to both the eye and the palate, with wild purslane that I collect from the garden, cucumber, and freshly boiled sweetcorn, one of the best of the season.😍🌽🥒

Ingredients for Dried Tzatziki with Purslane and Corn Recipe

  • 1 tablespoon finely chopped cucumber
  • 1 tablespoon cleaned purslane leaves
  • 5-6 tablespoons of boiled corn kernels
  • 1 bowl of strained yogurt
  • dried mint
  • Salt
  • 1 cloves of garlic
  • Olive oil
  • Optionally, some black cumin curd to serve

Fabrication:
1. Wash the purslane well and separate its leaves. Chop the cucumbers into small pieces. Remove the kernels from the boiled corn.
2. Mix cucumber, purslane, corn kernels, dried mint, salt and crushed garlic in a bowl.
3. Place the salad on a serving plate, drizzle with olive oil and serve with some black cumin curd, if desired.
