Ingredients for Unleavened Pastry with Dill Mahlep Recipe

  • 1 egg (on top of the yolk into the white)
  • 2 tablespoon of yoghurt
  • 1 tea cup oil
  • 1 teaspoon of butter
  • 1 package baking powder
  • 1 sweet spice salt
  • 1 teaspoon of sugar
  • 1 teaspoon vinegar
  • 1 teaspoon mahaleb (1 teaspoon is enough if freshly ground)
  • half a bunch of finely chopped dill
  • 3,5 glasses of flour (add the last glass little by little, depending on the consistency)

For inside:

  • Feta cheese
  • Cheddar cheese

How to Make Unleavened Pastry with Dill Mahlep?

  1. Put the oil, yogurt, butter, salt, sugar, mahaleb, vinegar and egg white in a deep bowl.
  2. Mix the ingredients well and start kneading by adding 3 cups of flour, dill and baking powder.
  3. Add half a glass of flour and knead until the dough comes together.
  4. Tear off tangerine-sized pieces from the gathered dough, roll them in your hands and press them open.
  5. Put a teaspoon of grated cheddar cheese and feta cheese in the middle and fold it closed.
  6. Press the ends so that they do not open and place them 2-3 cm apart on a baking paper lined tray.
  7. Brush the egg yolk on top and sprinkle sesame seeds if desired. Bake in the oven at 180 degrees until golden brown (approximately 25 minutes).
