This recipe is a recipe that we have organized in the past weeks and continues with different menus for 4 weeks. instagram It was one of my contest recipes. Instead of the homemade yoghurt sauce, there was a ready-made bechamel sauce version that you can prepare practically. It is possible to prepare the same recipe with 1 pack of bechamel sauce, but I like the original yogurt version more.
While preparing this recipe, I used 1 phyllo and 4 baguettes since we were two people, but if you are going to prepare it for 3-4 people, 2 phyllo and 6 baguettes are more than enough.
The recipe is very simple. We can say that after boiling the chickens, separating the water and picking the meat well is the only challenging part :)
There are many versions of this recipe that vary from region to region. Some people do not bake it again after adding the sauce, but serve it directly. Others, like in high society pastry, wrap the phyllo in the form of a rose pastry, bake it, dip it in broth, and then sauce it.
No matter how it is made, the most preferred one is of course the one with lots of butter :) I didn't oil the dough too much because I didn't want it to be too oily. Those who say that it tastes oily can melt the butter and drizzle it on the pastry and even add some to the yogurt sauce.
The sauce should be between pudding and boza consistency, so you can add water little by little.

Ingredients for Groom's Trousers Recipe
- 4 chicken drumsticks
- 1 pieces of dough
- 1 -2 tablespoons of butter
- 1-2 scoops of chicken stock to moisten the dough
- salt- black pepper
For Yoghurt Sauce;
- 2,5-3 cups of chicken broth
- 3 tablespoons of flour
- 4 tablespoon of yoghurt
- 1 egg yolk + 1 egg
- 2 cloves of garlic
- 1 tablespoons of vinegar
- Salt
For service:
- Butter
- Red pepper
How to Make Groom's Trousers Recipe?
- Place the baguettes in a medium saucepan. Add 5-6 glasses of water and boil the meat until it reaches the consistency to be shredded.
- Cut the dough into 2-3 finger-thick pieces with your hands. Grease a medium sized pyrex or baking dish. Lay the phyllo pieces in the bowl and add the butter pieces and put them in the oven that you preheated to 190 degrees.
- While the yufka is frying, shred the chicken meat, season it with salt and pepper and set aside.
- For the yogurt sauce, mix the yogurt, egg, flour, salt, crushed garlic in a medium saucepan. Add chicken broth and salt and cook on medium heat until it gets a pudding consistency. Add vinegar to the mixture that has a consistency, mix and remove from the stove.
- Drizzle 1-2 scoops of chicken broth on the fried phyllo and wet it.
- Spread half of the yogurt sauce you prepared on the phyllo and sprinkle the shredded chicken.
- Pour remaining sauce over chicken and spread with spoon.
- Bake in the oven preheated to 200 degrees until the top of the sauce is browned.
- Heat the red pepper flakes and butter in a saucepan.
- Serve by drizzling over the food you have taken from the oven.
