Couscous Salad with Zucchini Tarator

This time, with the inspiration I got from the famous golden days of the women of my childhood, I combined Couscous pasta, which is my favorite flavor of my childhood, and the result was this delicious Couscous Salad with Zucchini Tarator.

Ingredients for Couscous Salad with Zucchini Tarator Recipe
- Half a pack of Sprout Couscous
- 3 medium zucchini
- 1 handful of walnuts
- 4-5 tablespoons of olive oil
- 2-3 cloves of garlic
- 2 glass of strained yogurt
- 3 tablespoons of tahini
- Quarter bunch of dill
- salt
Fabrication:
- Boil the couscous according to the package instructions, drain and leave to cool.
- Grate the zucchinis. Sauté the zucchinis in olive oil until they absorb their water and let them cool.
- In a deep bowl, mix the yogurt, tahini, garlic and salt. Add the cooled zucchini and mix.
- Add the couscous, walnuts and dill, mix and place in a serving bowl.
- Let it rest in the refrigerator for 1 hour, then decorate and serve as desired.
