Hello Dear Friends,

Today I have a recipe that will make you feel like a holiday at home :) Çökertme Kebab, Çentik Kebab or Bodrum Kebab with its other name is a flavor I love.

It is interesting that I tasted this beautiful kebab for the first time in Istanbul, and I didn't like it very much because of its hard meat like straps and burnt potatoes. However, I gave the steaks added to the harmony of garlic yogurt, tomato sauce and potatoes a chance to try again later.

The first time I tried it at home, I marinated the finely chopped meat, and the result was very good. Of course, I chose the potatoes from the fries.

Normally, I'm one of those people who prefer garlic yoghurt to fries rather than mayonnaise. Instead of ketchup, tomato sauce, which I simply cook at home, is my first choice.

I'm thinking of adding this recipe to one of my iftar menus that I will prepare in the coming days, but as a matter of fact, this kebab would be a menu on its own :)

Ingredients for Çökertme Kebab (Bodrum Kebab) Recipe

For meat:

  • 300 g steak (up to 3 pieces)
  • 4 tablespoons of oil
  • salt
  • Red pepper
  • thyme

For the meat marinade:

  • 1 medium onion
  • 2 cloves of garlic
  • 2 tablespoon of olive oil
  • 3 tablespoons of vinegar

For the mashed potatoes:

  • 2 medium potatoes
  • oil for frying

For the Tomato Sauce:

  • 2 tablespoon of olive oil
  • 1 tablespoon tomato paste
  • 1 cups of tomato puree
  • salt

For service:

  • Garlic Yogurt
  • 3-4 green peppers

How to Make Çökertme Kebab (Bodrum Kebab) Recipe?

  1. Slice the steaks in julienne as finely as you can.
  2. Chop the onion and garlic randomly and put them in a deep bowl. After adding the oil and vinegar on it, add the meat and mix it and cover it with cling film and set it aside to marinate.
  3. Heat the olive oil in a small pan. Add the garlic and fry until the smell is gone. Add the tomato puree and cook, stirring, until the juice is absorbed. Add salt, mix and remove from the stove.
  4. Slice the potatoes into matchstick thicknesses. Start frying in plenty of oil and hot oil.
  5. In a large skillet, add the oil for the meat and heat it. Add the meat and start sautéing. When the meat starts to shrink, add the spices and cook for 2 more minutes.
  6. Take the fried potatoes on the serving plate and pour the garlic yogurt on it.
  7. Finally, add tomato sauce and sauteed meat and serve.
