Hello Dear Friends,

We have come to the end of a beautiful day. It was one of those rare days when I worked hard and jammed a lot of conversation :) As soon as I got home, I wanted to go to my computer and give you a weekend fun :)

This week's closing recipe is again smashed :) In spite of the classic pastries, it blooms… The one I prepared before rose bun I'm sure those who love this recipe will love this recipe too, because there is no change other than its shape.

The dimensions of the dough fit so well that every time I knead it, I find the same consistency. I don't think it's necessary to change and play with such a beautiful recipe.

You will always be successful if you remember that the most important thing you need to pay attention to in yeast dough is that the ingredients must be at room temperature and you need to give the dough some time for fermentation.

I thought it would be easier to explain it step-by-step with photos, since the production is a bit tricky. After the material section, you can see the construction stages.

Ingredients for Flower Pastry Recipe

For the dough:

  • 4 cups of flour (500 g)
  • 2 egg white
  • 1 finger missing from 1 glass of water
  • 1,5 sweet spice salt
  • 1 teaspoon of granulated sugar
  • 150 g margarine
  • 1 pack of instant yeast

For inside:

  • feta cheese

For the above:

  • 2 egg yolks + 1 tablespoon of milk
  • Black seed

How to Make Flower Pastry Recipe?

  1. Take the flour in a mixing bowl, add salt, yeast and sugar on it.
  2. Melt the margarine, add the egg whites and water to the flour and knead.
  3. After the dough comes together, take it to the counter. If the dough feels hard, sprinkle some water with your fingertips and continue kneading for 5 minutes.
  4. Shape the dough you have kneaded into a ball and rest it for 15-20 minutes by covering it with cling film.
  5. Break off tangerine-sized pieces from the fermented dough and make small balls by nesting them on the counter.
  6. Take the meringue on a lightly oiled counter and open it with the help of a rolling pin without thinning it too much.
  7. Put some of the feta cheese in the middle of the dough and close it as in the photo.
  8. Turn the dough you prepared over and with the help of a knife, make 4-5 scratches without getting too close to the middle of the dough.
  9. Turn the leaves of the dough separated into leaves on their side as in the photo.
  10. Arrange the pastries 3-4 cm apart on the baking tray on which you have greased paper or placed silpat.
  11. Brush them with egg yolk and bake them in a preheated oven at 180 degrees until golden brown.

    Hello Miss Nilay,
I came across your recipe on youtube and after visiting your site, I decided to make flower pagaca for my guests. I made flower donuts with olive paste, and I tried mussel pastries with cheese from a part of the dough. I also learned the tactics of rolling dough and mussel pogaca from your explanation on Youtube. It got full marks from my guests, my wife and most importantly my princess.
    Thanks for sharing.
    Best regards,

Can't you use fresh yeast instead of dry yeast?

    • On February 15, 2014 at 20:49

Maybe, but instant yeast reacts faster. You can use any yeast you want.

If we make the pastry from 1 pkt margarine, will 1 pkt of yeast be enough, I wonder how many pieces I want to make 50 pieces or something, if you answer I would be happy.

You need to increase all the ingredients equally. 1 packet of yeast only rises up to 500 g of flour. It comes out between 16-18 from the measurements in the recipe.
