Green Lentil Salad with Bulgur

I wanted to start this week with salads :) Recently, I've been trying to make as many salads as I can. In the evenings, instead of pasta and rice, I usually prepare hearty salads with meat dishes. Bulgur pilaf with lentils I love it. This time, I tried a slightly lighter salad with greens.
Fresh onions, parsley and dill added to it add extra flavor. When roasted peppers and corn are involved, it becomes a complete whole :) By the way, what I shared in the past weeks beet green lentil salad too you can try.

Ingredients for Bulgur and Green Lentil Salad Recipe
- 1 glass of green lentils
- 1 cup fine bulgur
- 4 stalks of scallion
- 3 roasted capia peppers
- optional pickled corn
- parsley
- fresh mint
- dill
- olive oil
- pomegranate
- salt
How to Make Green Lentil Salad with Bulgur?
- Take the lentils in a small saucepan. Add enough water to cover the top by 2-3 inches and cook on medium heat until soft.
- Put the bulgur in a bowl and add enough water to cover the top by 1 finger and cover the bowl with cling film. (Let the lentils swell as they cook.)
- Finely chop the spring onions, parsley, dill and mint.
- Chop the roasted peppers and pickled corn into small pieces.
- Take the lentils, bulgur and all the chopped ingredients in a mixing bowl.
- Add olive oil, pomegranate syrup and salt, mix and serve.
