I've been making rice for years. highland soup which he really likes so much that I decided to try it with wheat this time.
As a result, a delicious and hearty soup emerged. I think it is a flavor that can be tried with different legumes in the future.

Ingredients for Highland Soup with Wheat
- 1 cups of wheat
- 1 glasses of yoghurt
- 1 egg yolk
- 1 tablespoons of flour
- salt
- 7-8 glasses of water (2 glasses of broth)
- 1 spoonful butter
- 3 tablespoon of olive oil
- 1-2 tablespoons of dried mint
How to Make Highland Soup with Wheat?
- Soak the wheat 1 night before or at least 3-4 hours in advance.
- Put the swollen wheat in the pot, add 6 cups of water and cook until the wheat softens and starts to open.
- Whisk the egg yolk, flour and yoghurt well in a bowl.
- Add 2 scoops of yoghurt from the boiling soup water and mix.
- Keep stirring the soup while slowly adding the seasoning to the soup.
- Boil 1-2 times and add water according to your desire.
- While the soup is boiling on low heat, mix the butter and olive oil in a small saucepan, add the mint and fry it over medium heat.
- Add the sauce you prepared to the soup and mix.
- After boiling for 5 more minutes, add salt, mix and serve by taking it from the stove.
