Ingredients for Broad Bean Salad Recipe
- 300 g fresh broad beans
- 2 stalks of scallion
- 2 stalks of fresh garlic
- 8-9 mini tomatoes
- 6-7 tablespoons of olive oil
- juice of half a lemon
- dill
- salt
Fabrication:
- Sort and wash the broad beans. Add some salt to the water and boil it. Boil over medium heat until soft (5 minutes).
- Put the boiled broad beans into cold ice water, let them cool for 4-5 minutes, and then remove the skins.
- Finely chop the spring onion, garlic and dill. Divide the tomatoes into 2.
- Put the peeled broad beans and chopped ingredients into a mixing bowl, add olive oil, salt and lemon juice and mix.
- Serve with some fresh mint and lemon zest if desired.
