We had a wonderful trip to Cyprus at the beginning of summer. I personally prepared the Bitta bread on this trip and was amazed by its taste :) Bitta – Bidda A type of Cypriot bread. If you look at the content, it is completely shaped according to your taste. You can easily add onions, walnuts, halloumi cheese, green olives.

Even if you say you don't want to leaven bread dough, you can even use ready-made bread dough. In other words, it is possible to create a different flavor with 1-2 bread dough you take from the oven on Sunday morning.

The most important trick while preparing this bread is to knead the bread with olive oil after kneading it. Then you can knead it by adding the spices you want to add, such as mint, thyme and red pepper. Its taste is between bread and bun and I definitely recommend you to try it.

The amount of water may vary depending on the type of flour, as I mentioned in the recipe, add it in a controlled manner.

Ingredients for Bitta – Cyprus Bread with Olive and Halloumi Cheese

  • 5 water glass flour
  • 1,5 cups of warm water (to be added little by little)
  • 1 sweet spice salt
  • half teaspoon of sugar
  • half a pack of fresh yeast (20 g)
  • 1 teaspoon of dried mint
  • 1 teaspoon dried thyme
  • 1 glass of olive oil
  • diced halloumi cheese
  • black olive

For the top:

  • Sesame and black cumin
  • Black olive

Bitta – How to Make Cyprus Bread with Olive and Halloumi Cheese?

  1. Add half a pack of yeast to 1 glass of warm water, add sugar and wait for 5-6 minutes until the yeast becomes active.
  2. Open the middle of the flour and start kneading by adding the yeast water. Add salt and knead by adding water little by little until the dough has the consistency of an earlobe.
  3. After the dough has a consistency, take it into a deep bowl. Add the olive oil and spices and knead until all the olive oil is absorbed. Gather the dough by adding the cubed halloumi cheese and black olives.
  4. Break off tangerine-sized pieces from the dough, sprinkle with sesame seeds and black cumin.
  5. Place on a baking tray and leave to ferment for about 30 minutes.
  6. Bake in a preheated 180 degree oven for about 20-25 minutes. Serve warm or cold.

    I'm tired of the products I spend, It's so tasteless without salt, it's like I'm just eating dough, tasteless.
    The flour added while making the water sample and the water added later did not turn the dough into earlobes. It happened when the oil was added.
    It is full in softness, but the taste is zero.

      Hello, there is no problem with the recipe, but it may not suit your taste. If you want, you can add other ingredients that will increase its flavor.
