Bici Bici (with Watermelon & Strawberry Sorbet)

In my previous article, I mentioned that I will be in Adana on Sunday. We hit the road at around 4:30 am to visit Ms. Emine, one of the winners of the Mother's Day Application. Our journey that started in Sabiha Gökçen continued until the town of Yüreğir in Adana. As soon as we got off the plane, we got on our transfer vehicle and shopped for the meals I would make at the first market. As a matter of fact, the whole team was quite excited. Being a guest in the homes of people you don't know in a city you don't know, evokes different emotions.
When we got home, Emine and her family welcomed us with such a warm smile that we felt as if we had known each other for years. After I presented the gifts we brought to her, I was going to start my job in the kitchen when Emine said that it is not possible to do anything without having breakfast together, so we sat down for breakfast.
At breakfast, apart from the scones unique to Adana, we were accompanied by the wonderful jams they prepared with their own hands. After breakfast, while I was preparing the meals, my other teammates took over their duties. The house was cleaned, Emine's hair and make-up was done. Afterwards, we chatted as a family while drinking our tired coffees. Thanks again to his family and him for this beautiful day :)
Of course, our Adana adventure did not end like this, as soon as we finished our work, we hit the road to get to know the city. I would never have guessed that I would encounter such beauty. The food is different and the nature is beautiful… Everyone we talked to said that we arrived just in time and the weather would be quite hot in the coming days. Even now, it was hot for us Istanbulites :)
Before dinner, we ate bici bici, one of Adana's most famous desserts, on the banks of the Seyhan River. The bottom part of Bici bici is made by cooking the starch and water mixture, which we know as water pudding. The ice is grated with a special chisel made of molded ice on it. It is then colored and flavored with food coloring and rose water. Of course, powdered sugar is a must, and fruit is added to the original dessert. I took the photo above right before I ate the dessert there.
Of course, since we do not have such giant ice in our houses, you can color the tiny ice in the house through the blender. As a matter of fact, those who want to prepare a more natural mixture can also use sorbets prepared from strawberries or watermelon, like me. Thus, you can adapt a bici bici without using extra food coloring or fruit flavoring.
I am sharing the original recipe below. Those who want to prepare it with sorbet 250 gr sorted and washed strawberries + 250 gr seeds removed from watermelon 4-5 tablespoons of granulated sugar through a blender and the same they can use it after preparing it like in this recipe. For bici bici pudding, make sure to use cornstarch instead of wheat because the corn gets a better consistency and freezes.
Anyway, with this delicious dessert recipe, our Adana adventure has taken its place on my blog. While I was writing my article, I had a sore throat :)

Ingredients for Bici Bici (with Watermelon & Strawberry Sorbet) Recipe
For Bici (custard):
- 1 teaspoon of cornstarch
- 4 tea glass of water
For the sauce:
- rose water
- 1 teaspoon red food coloring
- fruit flavor upon request
- Su
For the above:
- ice shards
- Powdered sugar
How to Make Bici Bici (with Watermelon & Strawberry Sorbet) Recipe?
- Put the starch and water in the pot. Cook over medium heat until bubbles appear.
- Pour the thick custard into a lightly moistened medium-sized borek or porcelain bowl.
- Let it rest on the kitchen counter until it comes to room temperature, then put it in the refrigerator for 1 hour to solidify well.
- Slice as much as you want from the custard that has cooled and solidified and divide it into bowls.
- Mix water, food coloring and flavoring and set aside.
- Take the ice in the blender, crush it and divide it evenly into the bowls.
- Pour the flavored and colored water you have prepared over the bowls.
