How long do you need to keep the cookies in the oven? I can't keep up with the baking time for cookies that should stay white this way. If I leave it white, I'll see if it's raw inside or vice versa, I can't be sure it's cooked, it turns pink.

For the crunchy consistency of pastries and cookies, that is, in the common language, add very little mineral water (without disturbing the consistency of the earlobes in your dough). Without using baking soda, it will both swell and stay crunchy for days without getting stale.

Another kitchen secret for you. If you have to use flour of which you doubt its freshness, definitely pass it through a fine sieve (a rice washer will do this job) and ventilate. You will see the benefits. :)
