Ingredients for Piyaz Recipe
- 2 cups dried beans (spirit beans & sugar beans)
- 1 medium onion (chopped piyaz)
- 1 medium tomatoes
- 2 tablespoon finely chopped parsley
- 1 tablespoon of salt
- 1 tablespoons of granulated sugar
For sauce
- 1 Turkish coffee cup olive oil
- 2 tablespoons of vinegar
- Juice of half a lemon
- Salt
- 3-4 tablespoons of tahini upon request (I don't add)
For the above:
- Sumac or red pepper flakes
- 2-3 boiled eggs optional
Fabrication:
- Put the beans in the pot where you will boil them the night before and put them aside with enough water to cover them by 4-5 inches.
- In the morning, strain the water of the swelled beans, rinse them again and add enough water, salt and sugar to cover them by 4-5 fingers and boil them on medium heat until they soften.
- Finely dice the tomatoes.
- Chop the onions into thin long piyaz and mix with the chopped parsley.
- Drain the beans and put them in a salad bowl. Add the onion first, then the tomatoes.
- Finally, pour the sauce and serve. (Add boiled eggs at this stage if you are going to use them.)
