Since Sunday, I have been consuming bagels left over from breakfast and thrown in the freezer to prevent mold. As a matter of fact, it works for me more like this. I thaw the bagel I took out of the freezer in the microwave and use as much as I want and freeze it again.

Pazartesi bagel pizza, Tuesday bagel sandwich and this morning I overdosed and made simitchettas I made up myself :) Everything is very simple, even with sleepy eyes, carefully chop all the ingredients, turn on the oven and bake. I just made it for myself, so I only used a quarter of it. 1 big bagel will be good for 4 people.

  • 1 bagel (large ones sold in the oven)
  • 15-20 cherry tomatoes
  • 7-8 black olives
  • Desired amount of hard white cheese (basket cheese)
  • Olive oil
  • 2-3 stalks of fresh thyme

How to Make Simitchetta Recipe from Stale Bagels?

  1. Slice the bagels 2-3 cm thick. Chop the tomatoes to the size you want.
  2. Remove the pits from the black olives and chop finely.
  3. Chop the cheese the size of an olive. Separate the thyme leaves from their stems and mix all the ingredients lightly without crushing them.

    My dear Nilay, is this recipe tempting me? :) It's past midnight right now, it won't be bad if I head towards the bagels in our bread basket. Today, my neighbor brought me two bagels in the morning and bought them in the oven. I ate one for breakfast. The other is standing. I have some Tulum cheese, I'll put it in and throw it in my mouth at least ;)
