Pumpkin Pie – Sweet Pie
Hello Dear Friends,
I spent this weekend at Ağva Beyaz Ev, which made me feel the peace at home. Our meeting with dear Renkin is based on a few comments he made to me years ago. In one of his comments, he explained that they tried some of my recipes for breakfast at their boutique hotel, and that he wrote comments because he received very good comments from his customers.
When I went this weekend, I had the chance to eat the blackberry and orange jam prepared by my dear Aslı with my recipe. I don't know, this is actually not one of those things that can be put into words easily. When some of my friends go to them, they say, "I have prepared your recipe for you," and I would be very happy, but in a boutique hotel that hosts many special customers, it is completely different when my small measurements are made from tens of kilos and served to their guests.
Ağva Beyaz Ev is a boutique hotel that is close to Istanbul and leaves you alone with nature, but overlooks the Göksu Stream in a comfortable and comfortable way. We chose it for my birthday and wedding anniversary. Good thing we did. It has only 6 pleasant rooms and you don't see anyone around except at meal times. There is absolute peace and quiet.
It is highly preferred for wedding anniversary, marriage proposal or honeymoon. Some famous writers even shut down during the winter and work on their books. Each room has its own spirit and decoration. Every corner is full of fine and delightful details that are evidently handcrafted by women.
I said, Day 2, I would love to prepare a recipe together with Renkn and Aslı, if you are available, thank goodness they did not offend me :) We made pumpkin pie with my dear sister Gülizar (their mother Gülizar). I have never tasted such a pleasant and different flavor before. When Gülizar sister said that this pastry will get better as it cools, we rested it for one night and ate it for breakfast. Tahini is already very good with pumpkin, and we ate it with a little tahini supplement.
Peace, joy, friendship and pumpkin pie remained in my mind from 2 beautiful days :)

Pumpkin Pie – Ingredients for Sweet Pie Recipe
For the dough:
- 1 pieces of eggs
- 450- 500 gr flour (about 4 cups)
- Half a cup of Turkish coffee oil
- 1 sweet spice salt
- a small piece of fresh yeast (about 1 teaspoon)
- 1 glass of water (to be added little by little, maybe a little less or can be added)
Note: You can also prepare this pastry with the phyllo you bought from the yufka baker. You can make the phyllo with a little oil and then sprinkle it and use it.
For internal mortar:
- 900-950 g pumpkin
- 1,5 cup powdered sugar
- optional walnut chips
For service:
- Tahini on request
Pumpkin Pie – How to Make Sweet Pie Recipe?
- For the inner pilgrim, grate the cleaned and cleaned zucchini with the coarse side of the grater. Take it in a deep bowl, mix it with granulated sugar and set aside.
- For the dough, take the flour into a deep kneading bowl. Make a hole in the middle, add yeast and half of the water and mix. (Crush the yeast in water and let it become a slurry.)
- Add salt to the dough you have started to knead. Knead the dough by adding water in a controlled manner. (It means it's done when you get a smooth dough that separates from the container.)
- Divide the dough you prepared into 6-7 meringues according to the size of your tray and rest it for 10-15 minutes by covering it with a cloth.
- Open the meringue you rested in the size of the tray. Sprinkle it with pumpkin mortar and wrap it.
- Place it in the middle of the greased baking tray by wrapping it like a rose pastry. Do the same for all other meringues until the tray is full. Put water on the prepared pastry, put it in the oven preheated to 180 degrees and bake until it is browned.
- Slice the completely cooled pastry and serve with tahini, if desired.
