Pumpkin Cream Donuts

Sourdough Cinnamon Roll Buns were very popular, those who have sourdough at home have already tried it :) Those who do not have sourdough asked how they can make it and how much yeast they should use. Since I have similar recipes, I wanted to share the Pumpkin Cream Buns that I prepared for the 25th phenomenon episode of Sofra Magazine's 25th anniversary special issue.
This dough is soft. I'm not too loaded with spices and sugar, but if you want a more aromatic and sweet pumpkin mix, you can add extra sugar, allspice and cloves.
I used a muffin tray while cooking, but if you want, you can prepare it in the same way as sourdough muffins, you can reach the construction stages here.

Ingredients for Pumpkin Cream Pie Recipe
For the Donut Dough:
- 1,5 cups of warm water
- 1 teaspoon of cream
- 1 teaspoon of granulated sugar
- 1 packet of isntant yeast + 1 teaspoon of granulated sugar
- 2,5 cups of flour
For the pumpkin stuffing:
- 1,5 cups of boiled pumpkin
- 1 teaspoon of cinnamon
- 1 spoonful butter
- 2-3 tablespoons of granulated sugar
- 1 cup of walnuts
For the top:
- 1 egg yolk
- granulated sugar
- optional tahini for serving
How to Make Pumpkin Cream Pie Recipe?
- Mix warm water, yeast and 1 teaspoon of granulated sugar in a bowl and wait for it to activate for 10 minutes.
- Add the cream and granulated sugar to the yeast mixture and mix. Add the flour you have taken into the bowl of your mixer and knead at medium speed.
- Take the dough you have prepared into a deep bowl and let it rest for 30 minutes by covering it with a process film so that it can ferment.
- While the dough is resting, pass the pumpkin, sugar, cinnamon and butter required for the filling through the blender and mix.
- Roll out the rested dough to a thickness of 1 cm, spread it with the zucchini mortar you prepared and sprinkle with walnuts.
- Slice the roll you prepared when it is 3 inches thick and place it in the muffin molds that you have greased with butter.
- Brush them with egg yolk and sprinkle with granulated sugar if desired and bake in a preheated oven at 180 degrees for about 25 minutes until the dough is browned and the sugars are caramelized.
- Serve with tahini if desired.
