Quince Jam Poppy Cookies

We met with you one day late this week. It has been a week with lots of travel and celebration for me. I was only able to get over my tiredness. Now I am writing to you as one year older :)
Unfortunately, this year, I did not have the opportunity to escape from the city and take a breath because of the work at hand. Maybe we'll get lucky towards spring...
After hectic days, a stagnation grips a person, when you become such a minty mullah, the house is narrow. I woke up in just such a mood this morning...
Then I crept softly into the kitchen and began to wonder what would cheer me up. Finally, I opened the jar of grated quince jam that winked at me and inhaled its sweet scent. When I scrambled the pantry, the recipe of the day appeared before my eyes :)
My new hand made grated quince jam I used it in the cookies because it has a different consistency, but you can use a different jam or marmalade if you want.
The cookie dough is delicate, but when it's baked, it's delicious in your mouth. While I was cooking, I put quince jam on half of it for testing purposes, but when it came out, I didn't like its appearance, so I added jam to the other half later. I think it looks more elegant. Of course, you can use the first method if you want.
Finally, around 29-30 cookies come out.

Ingredients for Quince Jam Poppy Cookies Recipe
- 1 medium egg
- 125 g butter
- Half a glass of powdered sugar (58 g)
- 2 cups of flour (200 g)
- 1 cup of wheat starch (108 g)
- 1 teaspoon of baking powder (5 g)
- 1 packet of vanillin or 2-3 drops of vanilla flavoring
- half a teaspoon of oil
- 1 cup roasted poppy seeds for topping the cookies

- Quince jam
How to Make Quince Jam Poppy Cookies Recipe?
- Take the butter at room temperature into the kneading bowl. Add starch, flour, powdered sugar, vanilla baking powder, oil and egg and knead.
- Stretch the gathered dough and put it in the refrigerator to rest for half an hour.
- Divide the rested dough into 2-3 parts and roll it with your hands. Cut 3-4 cm long pieces from these rolls and roll them.
- Roll the walnut-sized pieces in the poppy that you poured into the plate and ensure that they are covered with poppy.
- Press the cookies into the middle of the baking tray with your index finger, 2-3 cm apart.
- Bake in a preheated oven at 180 degrees for 15 minutes.
- Take the baked cookies out of the oven, put quince jam on it with the help of a teaspoon and serve when it cools down.
