The recipe of the day is one of my favorite recipes recently. Avocado Cream Pasta :) A healthy and satisfying recipe that does not contain any animal products or fat.

When you prepare this recipe, if you want to make it even more nutritious, you can add some walnuts or cheese to it.

Ingredients for Avocado Cream Pasta Recipe

  • half a pack of pasta
  • 2 avocado
  • 1 tablespoons lemon juice
  • 1 large cloves of garlic
  • salt
  • black pepper
  • 1 scoop of pasta water
  • corn kernels
  • Cherry tomato
  • optional avocado chunks
  • water to boil the pasta

How to Make Avocado Cream Pasta Recipe?

  1. Boil water in a medium saucepan, add a small amount of salt and start boiling the pasta.
  2. While the pasta is boiling, cut the avocados into two parts. Take out the core and take the inside with the help of a spoon and put it in a deep bowl.
  3. Top the avocados with salt, lemon juice, black pepper and lemon juice. Add half a scoop of pasta water and pass it through the blender.
  4. Add half a ladle little by little to adjust the consistency and complete the sauce by passing it through the blender.
  5. Cut the cherry tomatoes into two parts and sauté in a low-fat pan.
  6. Drain the cooked pasta and mix it with the avocado cream. Serve with sautéed tomatoes, corn kernels and optional avocado pieces on top.
