for the first time this year ashura I did it was quite tiring but a nice experience. Of course, my right arm was caught in the evening for mixing it so that it wouldn't catch the bottom :) But we got the reward of our effort. It was quite good both visually and in terms of taste. By the way, many thanks to my Pervincik's Anushka, who gave me many tips on this subject. The trick of Ashura well-done legumes boiled separately. Especially when it is boiled in a slow fire, yes, it is daunting in this respect, but when it is finished, you see that it was worth the trouble.

Ingredients for Ashura Recipe

  • 250 grams of wheat
  • 200 grams chickpeas
  • 200 grams of dried beans
  • 200 grams of raisins
  • 100 grams of dried figs
  • 100 grams of dried apricots
  • 100 grams of peanuts
  • 3 cup powdered sugar
  • 1 tablespoon of cinnamon
  • 15 – 20 glasses of water

For decoration:

  • Currants, Chopped Walnuts, Grapes, Walnuts, Almonds, Cinnamon, Pomegranate Seeds, Coconut, Netted Pistachio, Candied Cherry

How to Make Ashura Recipe?

  1. Wash the wheat, beans, chickpeas and grapes and soak them overnight in separate containers. The next day, strain the wheat and put it in a large steel pot.
  2. Add 15 glasses of water and bring to a boil. Take the foam that accumulates on it with a colander, close the lid of the pot and boil it until the wheat bursts and becomes soft (if you put 2 cinnamon sticks in it, the smell is perfect).
  3. Drain the beans and chickpeas and boil them in separate bowls (I recommend that you start boiling all three at the same time, including wheat).
  4. Add the chickpeas and dried beans when the wheat broth is about to reach the consistency of flour soup. Boil well until it starts to thicken.
  5. Then add peanuts, raisins, finely chopped dried apricots and grated orange peels and mix. Bring a few boils to a boil.
  6. Finally, add the sugar and boil for 5-10 minutes, then add the figs, bring to a boil and remove from the fire.
  7. If you want to keep the consistency thick, dissolve a little wheat starch, which you take with the tip of a teaspoon, in 2 tablespoons of rose water and add it to the asurea. Boil for another 1-2 minutes.
  8. After the ashura is cooked, pour it into bowls while it is hot. When it cools down, garnish it with walnuts, pistachios, currants, cinnamon and pomegranate seeds and serve.

Note 1: Always keep hot water in the kettle or teapot because you may need to add extra water as it thickens.

Note 2: If you try to decorate it while it is hot, the material will collapse in because the ashure does not hold a crust.

    Hello.. I have been using this recipe of yours for 2 years. I hear very nice compliments from those who eat it with its decorations and taste :) Thank you very much for the recipe. However, while I'm boiling the bulgur, I add 5-6 cloves to it along with the cinnamon. It also gives an excellent taste in the orange peel. Good luck again :)

    Your hands look very nice and your decoration is great. By the way, I would like to give you a trick, wash the wheat in the evening, put it in the pot, add plenty of water and boil it for 5 minutes, then turn off the fire, cover the pot as if making yogurt and leave it until morning. When you get up in the morning, you will see that all the wheat is cooked.

    If you boil the wheat in the evening before going to bed with 15 glasses of water and turn off the stove, you will see that the wheat is cooked to its full consistency when you wake up in the morning. If you buy a can of chickpeas and beans ready-boiled and use them, what's easier than making ashura :) I do it this way, even because my wife doesn't like chickpeas and beans, I put the wheat in a blender and make it into a pudding consistency, then add apricots, currants, orange zest, cloves. I add etc. I advise.

    My dear Nilay, I just ate my ashura :) I multiplied the recipe with 3 because I made it for the crowd and the result was great, thank you very much :))) I used canned beans and chickpeas, they melted as I threw them at the time you wrote :)) But there was no problem in appearance and taste : ) You gave a very practical recipe :) Well done!

    I live in Konya. It is prepared from this soup on the day of Ashura in Kırşehir. The whole neighborhood enjoyed it. While the person who prepared the soup was distributing it, it was distributed to everyone, without any discrimination of foreigners.
    When I told my friends in Konya, they laughed a lot. They said that ashura is sweet, not soup. Thanks to Oktay USTAM, everyone learns that ashura is in their soup and they don't miss out on this delicious taste.

    Hello Nurhayat,

    You add the cinnamon sticks to the pot in the second boiling of the wheat and just before adding the other ingredients.

    It certainly does not give bitterness or turbidity. It adds a very pleasant aroma.
