Ashura Recipe (Full Measured)
Thank God this year it was a chance to boil the delicious ashura of our house, which is the heirloom of our grandmother. I love rituals like this because they remind us how less is more and how happy we are to share. A sweet rush in the kitchen, the fragrant smell that spreads from the stove to the whole house. There is neither sadness nor gloom.
I don't like to add milk and rose water to the soup, and I don't like it to be sugar-free, that is, tasteless. Since we add plenty of dried fruit, you can reduce the amount of sugar to 500 gr if you want.

Ingredients for Ashura Recipe
- 1,5 cups (250 g) of wheat for ashura
- 1 finger missing from 1 glass of water (125 g chickpeas)
- 1 finger missing from 1 cup (125 g) dry beans
- 1 finger missing from 1 glass of water (100 g) raisins
- 12-13 pieces (100 gr) dried apricots
- 10-11 pieces (100 gr) dried figs
- Peel of 1 medium orange
- 3,5 cups (650 g) granulated sugar
- 20 glasses (4 liters) of water
How to Make Ashura Recipe?
- Soak the wheat, beans, chickpeas in separate containers overnight. The next day, strain the wheat and put it in a large pressure cooker.
- Put the grapes, figs and apricots in the water and leave them for at least 30 minutes. Strain the water without adding to the soup, and chop the figs and apricots.
- Filter the soaking water of the wheat, put it in the pressure cooker, add 2 liters of water and boil it. After the whistle blows, cook for another 25 minutes and put it in a large pot with the water.
- Open the bottom of the pot on the medium-sized burner of your stove and at the lowest setting, and let it cook slowly.
- Strain the soaking water of the beans and chickpeas, put in the pressure cooker, add 2 liters of water and boil it, cook for another 25 minutes after the whistle blows and put it in the pot with the wheat.
- Add the peeled or grated orange peel.
- Add the figs, apricots and grapes to the soup pot.
- Cook for 15 minutes, stirring occasionally.
- When the water of the soup starts to thicken, add the sugar. When the sugar melts and the ashure boils, take it off the heat and divide it into bowls.
- When it is lightly crusted, garnish with the ingredients you want and serve.
