Hello Dear Friends,

It is so hot that my first choice is light and practical salads instead of heavy meals. Especially hearty legume salads are my favourites. with you before mung bean chard I shared the recipe. Artichoke and Mung Bean Salad is just as delicious :)

If you like it, you can also add sour or vinegar to this salad. You can also add fresh basil.

Ingredients for Artichoke and Mung Bean Salad Recipe

  • 1 cup mung beans (soaked the night before)
  • 2 fresh bowls of artichokes
  • 10-12 mini candied tomatoes
  • quarter bunch of parsley
  • 10-15 leaves of fresh mint
  • 7-8 sprigs of dill
  • 5-6 tablespoons of olive oil
  • juice of half a lemon
  • salt

Fabrication:

  1. Wash the mung beans and boil them in medium heat by adding enough water to cover them by 3-4 fingers (take 1 from time to time and see if it softens, almost 15-16 minutes is enough).
  2. In another pot, add enough water to cover the artichokes and add the juice of half a lemon and cook until soft.
  3. Finely chop the parsley, dill and mint you washed while the beans were boiling. Cut the tomatoes into two parts. Drain and dice the boiled artichokes.
  4. Drain and cool the cooked beans and mix the chopped ingredients well in a large mixing bowl.
  5. Drizzle olive oil, salt and lemon juice over the salad, mix again without crushing the mung beans and serve.
