While I am continuing my internship in Kivahan, I do not neglect to get plenty of recipes from our dear chief chef Ali Taşdemir. Making it with mother and daughter is quite tiring and troublesome, but when it is finished, it is not enough to taste.
Actually, we have all hosted Ali Usta in our homes before. Now you will ask how :) You know, years ago, we had small cook salt shakers in our house, those salt shakers caused many rumors.

Dough Ingredients:
- 500 g fine bulgur
- 100 gr semolina
- 75 g flour
- 1 pieces of eggs
- 150 g tomato paste
Inner material:
- 300 g fatty ground beef
- 100 ml oil
- 1 sweet spice salt
- 1 tea spoon black pepper
- 200 g onions
Sauce Ingredients:
- 500 g minced meat
- 1 medium onion
- 300 g chickpeas
- 150 g tomato paste
- 2 liter of boiled water
- Salt
How to Make Analı Kızlı Recipe?
For the insides of mothers:
- Chop the onions into small pieces. Add oil to the pan and fry the onions. Add 300 g lean ground lamb, ground walnuts, salt and pepper and continue to fry until the ground beef is cooked.
- When the minced meat you have prepared has cooled, cut it into small pieces of walnut and roll it in your hand.
- Place these balls on the tray and cover them with cling film and let them rest in the refrigerator for 1-2 hours.
For coating:
- Soak 500 g of fine bulgur in a little water, add 100 g of semolina, 75 g of flour, 1 egg and knead after the bulgur has evaporated and divide the dough into 2 parts.
- First, prepare the mains. Cut the mains into walnut-sized pieces, shape them into a round ball, make a hole with your finger and enlarge the hole by squeezing and turning.
- Put the meatballs you prepared into the dough, close and roll them.
- Take pieces of the dough you have reserved for the girls and roll them into tiny little pieces.
Making the sauce:
- Roast 500 g of cubed meat in a pot. When the meat turns pink, add the onion, add the tomato paste and add 2 liters of hot boiled water.
- Mix it with salt and pepper and let it boil. Add the previously boiled chickpeas to the boiling dish.
- Add our Anali and Maiden meatballs and cook for about 5 minutes.
