Kohlrabi (Radish Cabbage) in other words "kohlrabiI met ” at the market this week. While examining this strange plant that looks like an alien, the marketer showed the plate that he sliced and squeezed a lot of lemon. When I tasted it, I was quite surprised by the beauty of the taste of something that looks raw.
Kohlrabi is an edible cabbage the size of an orange. It can be boiled or steamed just like brussels sprouts, and it can also be used in salads like radish. We preferred to consume it with the fish and we liked it very well with the salad.
Rumor has it that it also regulates blood sugar, but I don't know much about it. Therefore, I do not want to mislead.
As an alternative to the salad I have given the recipe for, you can grate the same grated radish with the carrots in the salad and serve it with only olive oil and lemon juice.

Ingredients for Kohlrabi Salad Recipe
- 1 kohlrabi
- 1 small core lettuce
- 4-5 red mini radish
- 10-15 stalks of parsley
- 1 red roasted peppers
- 4-5 tablespoons of corn
- optional purslane leaves
For the sauce:
- Juice of 1 lemon
- 1 5-6 tablespoons of olive oil
- salt
- Juice of half an orange, optional
How to Make Kohlrabi Salad Recipe?
- Wash lettuce leaves in 1-2 waters and chop them after drying. You can also shred it by hand, if desired.
- Wash and slice the lettuce, cutting off the stem and root ends. Separate the parsley and purslane leaves from the stems with your hands.
- After slicing the roasted red pepper, put all the ingredients in a mixing bowl.
- Peel the kohlrabi, slice it or grate it and add it to the salad.
- Whisk the dressing ingredients in a small bowl and add to the salad after the salt has melted.
- After mixing all the ingredients with the sauce, serve in a salad bowl.
