My recipe for today is one of my favorite toasts. mediterranean toast, The difference is that it contains feta cheese, olive paste, tomato and thyme or basil according to taste.

I love black olive paste in sandwiches, but when it comes to toast, I usually like to use green olive paste instead of black olives. This is because it has less flavor and less salt.

It is very tasty with canakkale tomatoes in summer and cherry tomatoes in winter.

I usually prefer to use whole wheat loaf of bread instead of toast bread. If it's a little stale, don't enjoy it :)

Since it is not greasy like cheddar toast, you can drizzle a little olive oil on or inside if you want. You can also add some black cumin seeds if you like.

A light salad on the side and some oven-roasted with scalloped potatoes  It could be the perfect meal.

  • 2 slice of whole wheat bread
  • 2 slice of feta cheese
  • 2-3 cherry tomatoes
  • 1 teaspoon olive paste
  • 2 sprigs of fresh thyme or 2 leaves of basil
  • optional 1 teaspoon olive oil

How to Make Mediterranean Toast Recipe?

  1. Spread the olive paste on one of the bread slices.
  2. Place thinly sliced ​​white cheese on top of the olive paste.
  3. Arrange the sliced ​​tomatoes on top of the cheese.
  4. Sprinkle fresh thyme leaves over the tomatoes and drizzle with a little olive oil if desired.
  5. Place the other slice on top of the filled slice and bake in the preheated toaster until the bread is browned and the cheese melts slightly.
  6. Divide into 2 parts and serve hot.
