Ingredients for Ajvar-Eggplant and Pepper Paste Recipe

  • 500 gr. aubergine
  • 250–300 gr. red pepper (according to your taste)
  • 2--3 cloves of garlic
  • 1 small onion
  • 2-3 tomatoes
  • Hot pepper, red chili flakes (optional)
  • olive oil
  • salt

How to Make Ajvar-Aubergine and Pepper Paste Recipe?

  1. Open the grill of your oven, line the peppers and eggplants with aluminum foil or baking paper on your baking tray and roast them.
  2. Peel the onion, garlic and tomatoes, grate or finely chop as desired.
  3. Peel and slice the roasted aubergines and peppers.
  4. Take the olive oil in a large pan and heat it, add onion, garlic and salt to it and cook for 4-5 minutes. dry it.
  5. Add the tomatoes and sauté until lightly melted, add the eggplant and pepper, and cook for 10 minutes. Saute on low heat.
  6. Add the spices you want, pass through the blender and serve after cooling.
  7. To store it in the refrigerator, just put it in a jar and pour enough olive oil to cover it.

    I haven't tried this recipe, but after reading the reviews, I decided to try it. I just want to ask something, what should we do to hide it until winter? how healthy it is even if you find it hard to find paprika in winter.
