White Endive Salad
White chicory leaves are used raw as a salad, and boiled in meals. I have tried 2 different recipes since I bought it from the market last night. The first recipe is white chicory salad, which I am sharing with you now, and the first is white chicory omelet.

It is more beneficial to consume raw as a salad, but those who do not like bitter tastes may not like it. I think it tastes a bit like a slightly bitter lettuce :)

Materials:
- 10-12 leaves of chicory
- 1 cabbage leaf
- 1 small carrot
- 1 sweet red pepper
- 1 small cucumber
- 1 cloves of garlic
- 1 glasses of yoghurt
- Salt
How to Make White Endive Salad Recipe?
- Separate the endive from the leaves, wash and leave to drain.
- Grate the carrot and red sweet pepper. Wash and finely chop the cabbage leaf, garlic and cucumber.
- Mix yoghurt, salt and other ingredients you have prepared in a bowl.
- Divide the yoghurt salad you prepared into the strained chicory with the help of a dessert spoon and put it on the serving plate.
- Serve with a drizzle of olive oil, if desired.
