Instead of sautéing the vegetables, it is possible to make a delicious pasta that is boiled in the same water and cooked in its own vegetable broth. You can add not only cauliflower, carrots and celery, but also extra vegetables such as broccoli. One of the most ideal ways to evaluate the only vegetables left in the cupboard :)
After that, you can separate it from the boiled water and cook it on the stove for a while, then add cream and mix it to prepare a delicious sauce. Thus, you will also evaluate the water of your pasta.

Ingredients for Winter Pasta with Vegetables
- 1 quarter of a small cauliflower
- 1/XNUMX of XNUMX small broccoli
- 2 medium carrot
- 1 medium size celery
- 1 pack of pen pasta
- 2 liters of water
- 2 spoonful butter
- salt
- black pepper
- optionally 1 bouillon to boiling water
Fabrication:
- Cut the cauliflower and broccoli into small pieces. Peel the carrots and celery and cut them into cubes slightly larger than backgammon dice.
- Add salt to the boiling water and boil, first add the carrots and boil for 3-4 minutes.
- Then add the celery, broccoli and cauliflower, boil for about 10 more minutes and take the boiled vegetables from the water with the help of a perforated colander and transfer them to another bowl.
- Boil the pasta for 8-10 minutes according to the cooking time written on the back and drain. (While straining, set aside from the water if you wish.
- Take the butter in the pan and heat it. Add in the vegetables. Add salt and pepper and sauté for 1 minute.
- Add the pasta to the pot, mix and transfer to the serving plate.
- Serve sprinkled with grated Parmesan or cheddar cheese, if desired.
