Saffron Zucchini Pancakes

Ingredients for Saffron Zucchini Pancakes Recipe

4 zucchini
2 green onion
4 eggs
3 tbsp flour
2 tbsp breadcrumbs
2 tsp saffron
1/XNUMX cup of grated white cheese
Parsley
Dill
Black pepper
Salt
1 tbsp oil (for frying)

Fabrication:

Grate the zucchini and squeeze it with your hand to remove excess water. Finely chop the onion, parsley and dill and add them to the zucchini.

Break the eggs, add salt, black pepper, saffron and cheese respectively, sprinkle the flour and breadcrumbs and mix.

Fry in oil, place on paper towels and serve hot. If you want it to be light, you can also make it in the oven. Enjoy your meal.

*If the cheese is salty, do not add salt.
