Green Apple Purslane Salad

Today I worked so long in such heat that I wanted to make a cold and refreshing salad.
I decided to make the purslane salad with green apple and blueberry that my dear friend Derya mentioned earlier. He had tasted a similar salad before in Bozcaada. Based on what he told me, I prepared my own salad with ingredients at home. I used fresh blueberries from the freezer instead of dried.
When the distinctive sourness of purslane was added to the sweet sourness of sour apples and blueberries, a crazy flavor emerged. The addition of yogurt and a little garlic that I added as a stabilizer will definitely cheer your palate. If you have dried blueberries on hand, you can keep them in hot water for a while and add them to the salad after they soften.

Ingredients for Green Apple Purslane Salad Recipe
- Half a bunch of purslane
- 1 green sour apple
- 4-5 tablespoons of blueberries
- 8 tablespoon of yoghurt
- 1-2 cloves of garlic
- salt
- 3 tablespoon of olive oil
Fabrication:
- Extract the purslane, wash and leave to drain.
- Snake the apple and cut the skins into tiny cubes.
- Take the chopped apple, chopped purslane and blueberries into the mixing bowl.
- Add the grated garlic, yoghurt and salt according to your taste and mix.
- Take the salad on a serving plate, drizzle 2-3 tablespoons of olive oil on it and serve.
