Hello Dear Friends,

Purslane dish was one of my mother's favorite recipes. I used to wait like a cat in the kitchen while I was roasting onions and tomatoes. He used to give a slice of bread. I can never forget that taste.

My love of purslane is also different. I've made purslane dip, even purslane pesto, with or without rice, bulgur or green lentils. I'm particularly fond of the green apple salad. I decided to collect these recipes in a blog post called purslane recipes as soon as possible while writing the cover letter :)

Ingredients for Purslane with Rice Recipe

  • 1,5 bunch of purslane
  • 1 medium onions
  • 1 glass of tomato sauce or 2 medium tomatoes + 1 tablespoon of tomato paste
  • Half a cup of rice
  • Half tea glass of olive oil
  • salt
  • 1 teaspoon sugar (optional)
  • 1 cup of hot water

Fabrication:

  1. Wash the purslane and rice thoroughly and leave to drain. Chop the drained purslane into large pieces.
  2. Chop the onion. If you are using tomatoes, grate them. 
  3. Put the olive oil in the pan, add the chopped onion, salt and sugar. Fry the onion until it turns pink.
  4. Add tomato and tomato paste if using. Fry for another 1-2 minutes.
  5. Add the purslane and rice and mix.
  6. Add the water and cook the rice, checking it from time to time. Serve hot or cold when the rice is cooked.
