Practical Olive Oil Artichoke Meal

We don't come across much in Istanbul, but the baby artichoke is one of the most delicious things in the world. Mini mini fresh leaves and inner leaves not yet thorn. In the last 1-2 days, I have come across a lot in Spain, so I changed the recipe that I thought to share and decided on this practical and delicious recipe.
After all, I write my blog for myself as well as for you :) Every recipe is a memory for me.
One of the first things that come to mind when talking about Spain is tapas, and when I tasted the wonderful tapas with artichoke hearts and kalamata olives in Madrid, I thought of our delicious artichokes with olive oil. I can't wait to go back to Istanbul and cook again :)
I bought my artichokes from Alaçatı and brought them to Istanbul, but I'm glad I did. They don't have to be as small as in the photo below, but they should be as small and fresh as possible. Thus, you only need to clean the leaves in 1, maximum 2 rows from the outside, divide them into two parts and clean the purple leaves and fine hairs, if any.

The taste of artichokes cooked with leaves, just like stuffed artichokes with olive oil or stuffed artichokes with meat, is really different.

Remember, you can also make the same recipe with peeled artichokes. You can even reduce the amount of water

Ingredients for Practical Olive Oil Artichoke Dish Recipe
- 4 leafy mini artichokes or bowl artichokes
- 1 medium onion
- 1 tea glass of olive oil
- 1 teaspoon of granulated sugar
- salt
- 1 tablespoons of flour
- 1 water glass of water
Fabrication:
- Fill a deep bowl with water to drop the artichokes in. Squeeze 1-2 lemons into it and add the lemon peels.
- Trim the stems of fresh leafy artichokes. Cut the leaves at the end with the help of a knife and cut the artichokes into 2 parts in the middle.
- Take the hairy part above the fleshy part with the help of a spoon and put lemon in it and throw it into the lemon water. Apply the same process to all the artichokes.
- Chop the onion. Cut the artichokes into two pieces again in the middle and make quarters and place them in the pot.
- Add olive oil and chopped onions to the artichokes.
- Mix water, flour, granulated sugar and salt in a bowl and pour over the artichokes.
- Cook on low heat with the lid closed until the artichokes are soft.
- Serve when the cooked artichokes come to room temperature or have cooled completely.
