Lentil Soup with Noodles
A very useful, plentiful and hearty soup with noodles, lentils, in fact, I call this lentil soup a made-up soup. As for the reason, you can add whatever you want in it :)
It will be even more delicious if you fry the tomato paste with a little grated onion like I did.

Ingredients for Lentil Noodle Soup Recipe
- 1 teaspoon of green lentils
- 1 cup of noodles
- 4 cup of hot water
- 1 cups of broth
- Half of 1 medium onion (grated)
- 2-3 tablespoons of olive oil
- 1 tablespoon tomato paste
- salt
- black pepper
- dry mint
Fabrication:
- Boil the lentils for 10 minutes and drain the water.
- Put olive oil and onion in a medium saucepan. Fry the onions on medium heat, add the tomato paste. Add the washed and drained lentils to the fried tomato paste and fry quickly.
- Add 4 glasses of water and 1 glass of broth to the pot. Add the seasoning and noodles.
- Cook, stirring occasionally, until the noodles are soft and serve.
I tried it, but it didn't get any consistency, now I let it rest, maybe it will thicken when it cools.
Throw in the garlic without peeling it. Or you can fry it with onions. It elevates the taste of every meal.
I also make this soup very often, but I do not add onions. If you add some tomato paste and mint, it becomes much more delicious.

The one with Kirimli is my grandmother's soup. I like it very much, I put a lot of cumin in it, it would be very good.

Lentil juice does not spill. Because all the nutritious and vitamin-rich part of it goes into the water. While I am making this soup, I wash the lentils well and soak them in warm water for 15-20 minutes. (It cooks faster) I cook with the same water. When it starts to soften, I throw the noodles and when the noodles soften, I add mint and a little thyme. Boil for 2-3 more minutes and turn off the stove. If there is, I add a finely chopped bunch of nettle by mixing it into the soup. It is cooked with the warmth of the soup, its flavor and nutritional value are increased. Those who like cumin can add it.
In the Tokat region, the noodles cooked in boiled lentils are then added to the noodle with well-whipped yoghurt (could be with garlic).
This soup is very old. In the Amasya region, it is called a beard. If you change the juice of the lentils once or twice, the color of the soup will not be dark. We do not put onions. When it is to be eaten, we put a little yoghurt and garlic on the plate and pour mint fried in butter on it.
It's a delicious and easy soup, I make it all the time, but I don't put onions in it, I think it's not necessary. Also, dry purple basil is a must for this soup…. Try it that way….. I recommend it….
