Karpatka – Eclair Cake
I can't wait to share with you all the secrets of cooking Karpatka or Eclair Cake ☺️
First of all, it is important for the water and oil to boil for Patashu Dough. Afterwards, you should cook the dough on low heat by spreading and folding it. In order for the eggs not to be cooked, you must cool the dough you take from the stove for a while and add it one by one so that the eggs are mixed well.
I cooked the Patashu Dough for 170 minutes at 20 degrees. You can also prepare the cream 1 day before making the recipe. When you take it out of the fridge and come to room temperature, you can fluff it by whisking with butter.

For the dough:
- 1 tea glass of milk
- 1 tea glass of water
- 2 heaping tablespoon of Butter
- 1 water glass flour
- 4 medium egg
For the cream:
- 2,5 water glass milk
- 1 teaspoon of starch
- 1,5 tea glass of granulated sugar
- 2 egg yolk
- Half a teaspoon of vanilla extract
- 1 heaping tablespoon of Butter
For the top:
- 100 g dark chocolate
- 1 heaping tablespoon of Butter
Fabrication:
1. For the cream, beat the egg yolk and half of the granulated sugar by adding a little milk. Add the starch, remaining sugar and milk and cook, stirring until thickened.
2. Add vanilla essence, mix and remove from heat. Transfer to a bowl, cover with cling film and leave to cool.
3. Beat the cooled cream with Butter and fluff.
4. For Patashu, take water and milk in a saucepan and bring to a boil. Add the flour to the boiling mixture and start mixing the dough with the help of a spatula, cook for 3-4 minutes.
5. Take the gathered dough out of the oven. Stir for 1 more minute to release its initial temperature.
6. While mixing the warm dough at low speed, add the eggs one by one.
7. When all the eggs are finished and you get a soft but non-spreading dough, spread half of it in a springform mold that you have lined with greaseproof paper. Bake in a preheated oven at 170 degrees for 20 minutes.
8. Cook the remaining half in the same way. Put the first layer of dough into the springform mold. Add all of the whipped cream. Put the other patatu layer on top and let it rest in the refrigerator for at least 1 hour.
9. For the chocolate sauce, melt the chocolate and butter together. Spread it over the cake you got from the cupboard. Serve garnished as you wish.
