Circassian chicken
Actually, I didn't think to cook Circassian chicken tonight. Everything started with boiling the chicken wings in the freezer for my risotto recipe that I will make in the pressure cooker :) When the chickens boiled and I got as much chicken stock as I wanted, I decided to make creamy chicken in the oven first, but I decided on Circassian chicken because the risotto was creamy.
Circassian chicken is a very practical and delicious recipe, in fact, the old ones talk about it requiring a lot of mastery and effort, I guess because there was no blender in their period ;)

Ingredients for Circassian Chicken Recipe
- 300 gr. chicken (breast, thigh or wing)
- 1 handful of walnuts (a little more in 1 tea glass)
- 3 cloves of garlic
- 3 slices of stale bread
- 1 liters of water
- salt
- optional butter+red pepper
Fabrication:
- Add salt in 1 liter of water and boil the chicken for about 20 minutes. Remove the boiled chicken from the water with the help of a strainer. If you have boiled chicken with bones, peel it off the bones and finely shred it.
- Soak stale bread slices in the water you boiled the chicken in. Beat the walnuts and garlic thoroughly (you can grate with the small side of the grater if desired).
- Mix the shredded chicken, stale bread crumbs, garlic and salt, and mash with the tip of a fork (if you don't have time, you can use a rondo).
- Take the Circassian chicken you have prepared on a serving plate, pour roasted butter with red pepper, if desired, and serve by garnishing with walnut pieces.

To extract the oil from the walnut, you must beat it well in a bronze mortar. You can add red pepper powder to the oil and pour it by decorating it.

Besides chicken broth, I use some milk. Also, the amount of garlic will not suppress the taste of the walnut, so you should feel the first walnut when you take it in your mouth. It was a meal that really bothered our elders. We were lucky.

The first comment was for Circassian Chicken :) It made me bleed a bit, because my late grandmother, who was working like crazy with a special stone to extract the oil from the walnuts, and roasting specially prepared corn flour, came to my mind.. Circassian Chicken is a really troublesome dish. It is a dish that uses corn flour, not bread, and adds a very special mixture called Circassian salt. This is just a chicken appetizer recipe… I wanted to write it because it is a site that I admire so much. I do it out of habit, but I hope you find your real recipe and publish it... Love :)

My family is Georgian immigrants, there is a dish we call Georgian chicken. It is a hot pot dish with plenty of walnuts, saffron and cilantro. the color is also brown.
The original Circassian chicken is a sacred dish for Circassians, which is eaten hot, consisting of chicken and sauce. It is really tricky and takes hours to make.
So it has nothing to do with this recipe or the blender. The hard-to-make Circassian chicken you've heard of is also the real one.
How would I be happy if someone made the real recipe of that Circassian chicken. They spoil the recipes and naturally the taste of the dishes in order to make the job easier.
