Eggplant Kebab with Meatballs in the Oven

before the holidays Tray Kebab I had another meat dish recipe that I said I would share with you in my recipe. Although it's a little late, it's finally live :) Baked Eggplant Kebab again, an oven dish that is as easy and delicious as a tray kebab.
You can increase the amount of minced meat and eggplant according to the number of people.

Ingredients for Eggplant Kebab with Meatballs in the Oven Recipe
- 400 gr mince
- 3 medium eggplants
- 1 medium onion
- 1 medium tomatoes
- 3-4 green or green peppers
- 1 cloves of garlic
- salt
- black pepper
- Red pepper
For the sauce:
- 1 medium tomatoes
- 1 dessert spoon tomato paste
- 1 tea glass of hot water
- 1 tablespoons of oil
- salt
- black pepper
Fabrication:
- Chop the eggplants, tomatoes and peppers. Put the eggplants in salted water.
- Grate the onion, crush the garlic and add it to the ground beef you bought in the mixing bowl. Add the spices and knead for 5-6 minutes.
- Drain and dry the eggplants. Cut off pieces from the minced meat and roll them in your hand and arrange 1 piece of eggplant and 1 meatball in the oven dish.
- Put the tomatoes and peppers on the meatballs and eggplant you have lined up.
- For the sauce, grate the tomato, add the tomato paste. Add hot water, oil, salt and pepper, mix and pour over the eggplants.
- Cover the baking dish with greaseproof paper, cover it with foil in an airtight manner and bake in the preheated oven at 200 degrees for 30 minutes.
- Uncover the dish after 30 minutes, cook for 15-20 minutes until the eggplants and meatballs are browned and serve.
