Everyone hello,

The first recipe of the week is Crete Ezme, one of my favorite appetizers. As with many appetizers, everyone prepares this practical delicacy according to their own taste. I have never come across a recipe and taste that is similar to each other in any place I have been to.

The biggest common point in the prepared recipes is that 2 kinds of cheese are used and walnuts are definitely included. Although some add peanuts and almonds to the net, like me, you can also use these nuts by beating them whole instead of the net. Thus, their own oils will enter into the appetizer and add an extra flavor.

While I was preparing it, I used the full fat ezine cheese and spreadable breakfast curd cheese at home. When the appetizers we prepared in the evening were not finished, I decided to close the rest in an airtight way and use it as breakfast. This morning, I consumed some of it with toast, tea and olives :)

Ingredients for Cretan Paste Recipe

  • 150 g full fat cheese
  • 3 tablespoons of curd (heaping)
  • 3 tablespoons of walnuts
  • 4 tablespoons of peanuts
  • 3 tablespoons of almonds
  • 3-4 tablespoons of olive oil
  • 1 cloves of garlic
  • optional red pepper flakes and dill

Fabrication:

  1. Take the feta cheese and curd cheese in a deep bowl. Add the olive oil and crushed garlic and mix the cheeses by crushing them with the help of a fork.
  2. Add peanuts and almonds, crushed walnuts and continue mixing. Finally, add the chili pepper and the finely chopped dill.
  3. If you want it to be a little softer, add a little more olive oil and mix.
  4. Take it on a serving plate, serve with toasted bread, if desired.

      Hello, nuts such as finely chopped hazelnuts, pistachios and almonds are called net.
