Ingredients for Purslane Salad with Chickpeas
- 1 cup boiled chickpeas
- 3 tablespoon of olive oil
- 1 tablespoon of pepper paste
- salt
- black pepper
- dry mint
- little cumin upon request
For the base:
- 1 bowl of yogurt
- 1-2 cloves of garlic
- salt
- 1 vineyard purslane
Fabrication:
- Take the olive oil in the pot, add the tomato paste, fry it on medium heat until its color comes out.

- Add the spices and cook for 1-2 minutes, stirring, and remove from the stove.
- For the plate, take the yogurt in a deep bowl, add garlic and salt and whisk.
- Add the purslane, which you wash and chop well, to the yogurt and mix.
- Take the purslane base on a serving plate, make a hole in the middle and serve by adding the chickpeas you prepared on top.
