Carrot Tarator – Carrot Salad with Yogurt

Ingredients for Carrot Tarator – Carrot Salad with Yogurt
- 3 medium carrot
- 1 glass of yoghurt strained yoghurt (heaped)
- 2-3 cloves of garlic
- 4-5 tablespoons of olive oil
- salt
- 1 teaspoon granulated sugar (optional)
- walnuts for serving
Fabrication:
- Wash and peel the carrots. Grate with the coarse side of the grater.
- Take olive oil in the pan, add the carrots, salt and powdered cherries and sauté on medium heat until the carrots soften and turn colour.
- Crush the garlic. Chop the walnuts.
- Remove the cooked carrots from the heat, mix them with garlic and yogurt.
- Saute the walnuts in a little olive oil and pour over the carrot tartare and serve.
