Black Carrot Soup

When a friend of my father brought a lot of black (purple carrots) from Mersin, I decided to make a different recipe from the salad. The taste is quite good, you can add a little more water if it is dark for you.
Black carrot, which is used as an organic food dye, is also the raw material of turnip juice. Its flavor is slightly different from the orange carrot we know. It paints hands even when peeling.

From what I've read it has numerous benefits. Some of them increase breast milk, are good for skin and eye diseases, soften the chest and give comfort in asthma, bronchitis, hoarseness.

Ingredients for Black Carrot Soup Recipe
- 3 medium black carrots
- 1 large potatoes
- 1 red onions
- 1,5 liters of water (1 bouillon if there is no broth)
- 3-4 tablespoons of olive oil
Fabrication:
- Peel and wash the carrots, onions and potatoes. Chop into coarse cubes.
- Put all the ingredients in the pot and add all the water to it.
- Cook over medium heat until the carrots and potatoes are tender.
- Blend your cooked soup in a blender until there is no roughness.
- Boil 1 more time and serve hot.
