Baked Sea Bass

I am writing to you a little lighter today, finally I saw the numbers 62. My intention until the end of this week is to reach 61's, but let's say it's fate.
There is an interesting intensity during the day this week, the projects flying in the air, the offers and questions waiting to be answered, even my daily walk started to hang after dinner. Of course, 2 months later, we have a wedding and an upcoming barbecue party. The situation is a bit difficult, you understand.
Last night, I decided to prepare sea bass because I wanted to eat something delicious without much hassle. If it is cooked to taste, there is rarely a dish as delicious as sea bass in the oven.
I like to use a little bit of tarragon as it suits fish dishes very well. Since I did not have fresh tarragon on hand, I used tarragon herb white wine vinegar.
The combination of vinegar and tarragon is amazing. Let me share a culinary secret with you, vinegar partially takes over the job of bay leaf and ensures that the skin of the fish comes out crispy without sticking to the meat.

Ingredients for Baked Sea Bass Recipe
- 1 sea bass (per person)
- 1 red onion (2 if small)
- 1 pinch of parsley
- 2-3 tablespoons of tarragon vinegar (fresh tarragon + grape vinegar is also suitable) 2 bay leaves if none is available
- 1 cup of tomato puree (optional)
- 2 slice of lemon
- salt
Fabrication:
- Clean the sea bass at the fisherman and make scratches on both sides as in the photo.
- Chop the onion into rings and lay it in the baking dish. Wash the sea bass and place them on the onions. Lightly salt the sea bass inside and out.
- Drizzle the vinegar over the fish. Put the lemon slices and sprinkle with parsley, finally add the tomato zest if desired.
- Cover the fish with oiled paper, cover it with aluminum foil and tighten the edges so that it does not get air.
- Bake in a preheated oven at 200 degrees for 45 minutes, covered, and another 10 minutes to open and fry.
- Serve hot.
I felt bad while reading another good recipe, I definitely want to make it tonight, I'll add whatever I find, anyway, weight is not a problem for us men, let the ladies think :)
Putting 2 pieces of peeled apple slices between the sea bass, the result will surely turn into a better flavor.
