When preparing the recipe, it is necessary to slice it as thinly as possible. For this, you can use a chopper, also known as a mandolin, as I used in the video. There are 4-5 lira metal chisels, which are also available in the markets for cutting potatoes with serrations, maybe they can be of use to you as well.

However, the mandolin is the most sticky because it is important that the potatoes are of equal thickness while cooking. Thin ones can burn while thick ones can stay raw. You can also experiment with a vegetable peeler. It works when you fry chips.

Ingredients for Baked Potato Chips Recipe

  • 2 medium thin skinned potatoes
  • salt
  • black pepper
  • olive oil
  • vinegar (to put in the wash water)

Fabrication:

  1. Wash the thin-skinned fresh potatoes thoroughly (brush to remove any grit, if any). Slice thinly with a mandolin, knife or vegetable peeler,
  2. Take the potatoes in a deep bowl and put plenty of water in the bowl.
  3. Wash the potatoes by adding salt and vinegar to the water and mixing them.
  4. Drain the potatoes and wash them under plenty of water. Strain again and remove the moisture with a paper towel to dry.
  5. Add salt, pepper and olive oil to the bowl of potatoes and mix.
  6. Place side by side on a baking tray lined with greaseproof paper. (Be careful not to overlap each other)
  7. Bake in a preheated oven at 175 degrees for 15 minutes until golden brown.
  8. Take the tray out of the oven, turn the potatoes over and cook for 8-10 minutes until the potatoes are completely browned and curled around the edges. Serve hot or cold.
